10.晾凉面团的时候,将适量糯米粉倒入平底锅内

11.小火慢慢不停翻炒,直至面粉微微发黄并有面粉香气散发出来即可关火,晾凉后即可当扑面使用

12.蒸好冷却的冰皮面用手指背以按压和揉面的方式,把浮油轻揉成面团里

13.将皮与馅的比例按3:2分。我的月饼模具是50G的,所以将自制红豆沙分成20G一个揉成团

14.将冰皮分成30G一个揉成团

15.手沾上扑面,取一份冰皮按扁

16.放入豆沙馅像包汤圆一样包起来

17.月饼模内放入一点扑面防粘,倒出多余的扑面,然后将做好的月兵团放入模具里,收口朝外,用手轻轻把底部突出的地方压压平,并沾一点扑面

小窍门&温馨提示
1.澄粉就是小麦淀粉哦
2.牛奶也可以换成水,味道会清淡一些
3.完全蒸熟的冰皮面团表面很平,没有中间凹陷。拨散检查时,内部和周边颜色一致乳白略带透明感,如果发现中间部分比碗边部分白,那就表示没有蒸透,还要再加时间。如果配方份量加倍的话,那么蒸的时候就要应延长10分钟以上。
